Spanish Omlette


Ingredients:


Cauliflower – tiny florets
Onion – 1
Green Chilies
Spring Onions
Carrot
Capsicum / Bell pepper (all colors if available)
Beans
Sweet Corn
Olive oil / any other oil
Chili powder / Pepper powder
Salt
Mixed Herbs

Instructions:

  • ·         Finely chop and slice all the mentioned veggie ingredients and beat 3 or 4 eggs with salt in a separate bowl
  • ·         Heat oil in a non-stick frying pan and add all the veggies except spring onion greens which doesn’t take much time to cook, add salt and chili powder/pepper powder (only sufficient for the veggies) – saute
  • ·         When they are half cooked and crispy, add spring onion greens, mixed herbs and saute for 2  minutes
  • ·         Spread the ingredients evenly all over the pan
  • ·         Pour the beaten eggs on the ingredients in the pan, sprinkle pepper powder and mixed herbs evenly all over it
  • ·         Cover the pan and let it cook for 5 minutes in medium flame till the edges appear crispy and the omlete is cooked on the top (not raw or liquidy)
  • ·         Do not turn the omlete, just serve hot from the pan and cut into portions if you wish to share
  • ·         Tip : While beating the egg add little milk and salt so that the omlete gets fluffy and also tastes good
