Pumpkin Curry / Colyachi bhaaji (upwas special)


Ingredients:

Red pumpkin / cole (Marathi) – cubed
Green chilies
Curry leaves
Groundnut powder (coarsely ground)
Jeera
Oil
Sugar (pinch)

Instructions:

  • ·         Heat oil in a sauce pan
  • ·         Add Jeera, green chilies and curry leaves – saute
  • ·         Add pumpkin and coarse groundnut powder – saute and add water
  • ·         While boiling add salt and a pinch of sugar and let it cook till the vegetable is done
