Aloo Baigan Sabji / Potato and brinjal side dish for chapathi

Ingredients:

Potatoes – washed and cubed
Brinjal – Washed and cubed
Onion – 1 big sized, chopped into thin slices
Tomato – 1 big, chopped into small pieces
Garlic cloves – 4 to 5, thinly sliced
Turmeric powder, Chili powder, Coriander powder, Garam Masala / Kaala Goda Masala and salt
Oil, Mustard and Cumin seeds
Coriander leaves – chopped (for garnish)

Instructions:

  • Heat oil in a kadai, add mustard and cumin seeds
  • When they splitter, add chopped onion and garlic – saute
  • Add Turmeric powder, Chili powder and Coriander powder – mix well and add tomato
  • When tomatoes are cooked (mashed), add the potato and brinjal pieces – saute for a while
  • Let it cook in medium flame by placing a lid on the kadai with a cup of water (to avoid veg from burning)
  • Check and mix the sabzi in between to make sure there is enough moisture from the water kept on the lid. Add water from the lid if sabzi is becoming dry
  • When sabzi is almost cooked, add Salt and Garam masala – mix and let it cook for few more minutes
  • Garnish with Coriander leaves and serve hot with Phulka, Roti, Poori or Chapathi

  1. beautiful eggplant,you're good. by the way you can tell how you can grow them without a greenhouse? my family recently started in the greenhouse to nurture them. They read like galvanized bucket http://apromera.com/ I know little, as in such positions in particular. So once I found you can tell if they can grow at temperatures normal ? about 20-30 in the summer and below in winter
