Dalma / Moong dal with Mixed veg and Coconut


Ingredients:


Split Moong dal – 2 cups
Onion – 1, finely sliced
Tomato – 1, chopped
Jeera / Cumin seeds
Red Chilies
Fresh Coconut scrapings
Mustard oil
Mustard seeds
Salt and Turmeric powder
Potatoes – 2, cubed into 1 inch pieces
Lauki / Bottle Gourd – cubed into 1 inch piece (handful)
(I only had these 2 vegetables at home today, but the same recipe can be made with all of these vegetables – Carrot, Pumpkin, Beans, Brinjal, Cauliflower, Raw Papaya, Raw Banana, etc)

Instructions:

  • ·         In a cooker, dry roast the split moong dal till slightly brown
  • ·         Add water, cubed vegetables, salt and Turmeric powder – pressure cook for 3 whistles
  • ·         In a small mixer jar, add slightly roasted 2 tbsp Cumin seeds and 4 to 5 Red Chilies – make powder
  • ·         In a kadai heat Mustard oil, add Mustard and Cumin seeds, Onion – saute till its golden brown
  • ·         Then add tomatoes, when its cooked, add Roasted Cumin-Red Chili powder – mix well
  • ·         Add the boiled dal and vegetables into the kadai – let it boil
  • ·         At last add Fresh Coconut scrapings, boil for few minutes
  • ·         Serve hot with Steamed rice
