Pineapple Chicken


Ingredients:


Boneless Chicken – 250 g, small pieces, boiled
Pineapple – sliced into lengthwise pieces
Bell Peppers – I only had yellow and green
Cabbage- thinly sliced, a handful (optional)
Carrot – sliced into round pieces
Onion – 1, thinly sliced
Ginger-garlic paste
Chili flakes
Pepper powder
Salt
oil

Instructions:

  • ·         Heat oil a nonstick frying pan and sauté onions
  • ·         Add ginger-garlic paste – sauté until raw smell vanishes
  • ·         Add the boiled chicken, fry it with salt, chili flakes and pepper powder
  • ·         Add pineapple pieces and let it cook covered, till the chicken is completely done
  • ·         Meanwhile, heat oil in another pan and stir fry the veggies
  • ·         When chicken is slightly brown, add the stir fried veggies – cabbage, carrot and bell peppers
  • ·         Mix well, adjust salt and spice and serve as side dish for steamed rice or Fried rice
