Ingredients:
Potato –
cut into wedges
Lady’s
finger / Okra – cut into 1 inch pieces
Carrot – 1,
sliced into round pieces
Cauliflower florets
Onion – 2,
big, chopped
Ginger-garlic
paste
Yogurt – ¼
cup
Tomatoes –
3, big
Cumin
powder – 1 tbsp
Coriander
powder – 2 tbsp
Turmeric
powder
Chili
powder
Salt
Kasuri
methi – optional
Oil to fry
Instructions:
- · Heat oil in a kadai, sauté chopped onion
- · Add ginger – garlic paste and sauté till raw smell vanishes
- · Then add the chopped tomatoes, turmeric powder, chili powder, coriander powder, cumin powder, little salt and cook till its mushy
- · Transfer to a mixer jar and make a thick masala paste – keep it aside
- · In a tawa or frying pan add 2 tbsp oil and shallow fry one kind of vegetable at a time - keep it aside
- · In the initially used kadai add little oil and the masala paste – cook until oil starts coming out at the sides
- · Whenever ready to serve, heat the tawa, mix the masala with the fried vegetables and Serve hot with Chapati / Parantha
