Tondlichi Bhaji / Tondli Ki Sabzi / Ivy Gourd stir Fry


Ingredients:

Ivy Gourd (Kovakkai in tamil)
Tomato – 1, chopped
Cumin seeds
Hing
Turmeric powder, Chili powder, Coriander powder and Salt
Coriander leaves
Lemon squeeze

Instructions:

·         Cut the tondli lengthwise and chop tomato into tiny pieces
·         Heat oil in a pan, add cumin seeds and hing
·         When the cumin seeds starts splittering add tondli and stir fry till its half done
·         Later add turmeric powder, chili powder, Salt and Coriander powder
·         Mix well and let it cook covered with lid
·         I always keep water on the lid while its cooking so as to avoid the veg from getting burnt. No need to add water to the veg in such case
·         Once the veg is cooked well, add chopped coriander leaves and few drops of lemon squeeze

·         Serve with Roti
