Egg N Tomato Fried Rice


Ingredients:

Onion – chopped
Garlic – chopped
Capsicum – chopped lengthwise (optional)
Tomatoes – 2, chopped
Eggs – 2, Scrambled / fried
Steamed and cooled rice / leftover rice
Haldi, Chili powder / Pepper powder, Coriander powder, Garam Masala
Oil
Mustard and Cumin seeds
Salt
Curry leaves (optional)

Instructions:

·         On a tawa, fry / scramble eggs with salt and pepper powder – keep aside
·         Heat little oil in a wok, add mustard and cumin seeds
·         When it crackles add chopped onion, garlic, curry leaves and capsicum – sauté
·         Add chopped tomatoes as well and cook till its mushy
·         Now add Haldi, Chili powder / Pepper powder, Coriander powder, Garam Masala and salt
·         Mix well and let it cook for few mins
·         Add the rice, mix well and fry for few mins on high flame (continuously mixing)
·         Adjust the salt and masalas

·         Atlast add the scrambled eggs, mix well and serve hot
