Bitter gourd – remove seeds and cut into pieces
Onion
– 1 medium, Chopped
Tomato
– 1 medium, Chopped
Garlic
cloves – 5, Chopped
Oil,
Mustard and Cumin seeds
½
Fresh Coconut, grated
Sambar
/ Curry Masala powder
Coriander
leaves, Chopped
Turmeric
powder, Chili powder, Coriander powder, Pinch of Sugar and Salt
Instructions:
- Ø Heat 1 tbsp oil in a Kadai, add Mustard and Cumin seeds
- Ø When it crackles add chopped onion and garlic – sauté
- Ø When onion becomes translucent add bitter gourd – sauté for few mins till its fried/half cooked
- Ø Add chopped tomatoes, cook till mushy
- Ø Add turmeric powder, Chili powder, Coriander powder, Sambar masala, Salt and Sugar – mix well and let it cook in low flame to make sure doesn’t get burnt
- Ø After few mins, add 2 cups of water and let the bitter gourd cook well, with lid on
- Ø Once done, add the freshly grated coconut scrapings and let it boil for 2 to 5 mins
- Ø Adjust the taste, turn off the burner
- Ø Garnish with Coriander leaves and Serve with Steamed rice
