Scrambled Egg Rice


Ingredients:


2 Eggs
Leftover rice
Onion – 1, chopped
Tomato – 1, chopped
Garlic cloves – 3, chopped
Green chili Sauce
Turmeric powder, Coriander powder, Pepper powder / chili powder, Garam masala and Salt
Oil and Mustard seeds

Instructions:

o   On a pan, break 2 eggs, add salt, crushed pepper – scramble it, keep aside
o   Heat oil in a wok, add Mustard seeds
o   When it crackles add onion and garlic – sauté
o   Later add Tomato and all masala and salt – cook till its mushy
o   Add Green Chili Paste, mix well and after few minutes add the rice as well
o   In high flame, keep mixing the rice with the ingredients, while it gets fried as well
o   Later add Scrambled egg, mix well and Serve
o   Garnish with coriander leaves (I dint had them that day)

 It’s a quick fix recipe. Very simple and yummy…
