Stir Fry Chicken Spagetti


Ingredients:
Spagetti – 100 gms
Boneless chicken – small pieces or as you like
Soya sauce
Olive oil
Chopped Onion
Chopped ginger and garlic cloves
Chopped Spring onion and Greens (keep separate)
Chopped Carrot
Chopped Capsicum
Pepper powder, Salt

Steps:
·         In a bowl mix the chicken pieces with 1 tbsp soya sauce and salt – marinate it
·         Heat water in a sauce pan and when it boils put the spaghetti in, with little Salt and little olive oil – let it boil till its cooked well but don’t overcook it, keep checking
·         Once cooked strain out the water completely, wash it with cold water – strain completely and keep aside to cool down. Add little Olive oil to avoid sticking
·         Now heat Olive oil in a frying pan, chopped onion, spring onion, garlic and ginger – sauté
·         Add the marinated chicken, carrot and capsicum – sauté
·         After few mins of stir frying it add vinegar, pepper powder and adjust salt.
·         Add Spring onion greens
·         Keep stirring through and when its cooked well enough add the cooked spaghetti - stir well for few minutes, add a dash of olive oil if you want
·         Serve it steaming hot with a perfect soup for a perfect dinner
