Aloo Baigan Sabzi rasse wali

Ingredients:

Potatoes – cubed
Brinjal – cubed
Onion –Chopped
Tomato – chopped
Ginger-garlic paste
Dry coconut powder / scrapings
Curry leaves
Turmeric powder, Chilipowder, Corinaderpowder, Garam masala and Salt
Oil, Mustard seeds, Chopped coriander leaves, half lemon juice

Instructions:

  • ·         Heat oil in a Kadai, add mustard seeds and when they splitter add chopped onion, gg paste – sauté well
  • ·         When raw smell vanishes add chopped tomato and when they mashes add all the masalas, mix well and then add dry coconut scrapings
  • ·         Mix it all well with the cubed vegetables and salt
  • ·         Fry along with the vegetables for a while
  • ·         Then add water to it and cook covered in medium flame till the veggies are cooked
  • ·         Atlast add chopped coriander leaves and lemon juice before serving
