Baigan Mattar


Ingredients:
Big Brinjal (Barta baigan) – chopped into cubes
Chopped onion
Chopped garlic
Green chilies
Fresh green peas/Mattar
Turmeric powder, Chili powder, Coriander powder, Kala masala and Salt
Oil, mustard seeds

Steps:
·         Heat oil in a kadai, add mustard seeds and when they splitter add chopped onion, garlic and green chilies – sauté
·         When onion is golden brown add the chopped brinjal and matter – sauté for a while, add all masala ingredients, mix well
·         Cover the lid and let it cook in low flame till the vegetable is done

·         Serve hot with chapathi / Pulka roti
