Kaddhu and Peanut sabzi

Ingredients:

Kaddhu (Bottle gourd) – chopped into small pieces
Roasted Peanut – coarsely ground powder
Onion – chopped
Curry leaves
Green chili-garlic paste
Turmeric powder, Chili powder, Salt and pinch of Sugar
Oil, Mustard seeds, Hing, Dry Red Chili
Chopped Coriander leaves – 3 tbsp
Thick curd (optional)

Instructions:

  • ·         Take the chopped Kaddhu in a microwave safe bowl with half cup of water – cook with lid in High for 5 mins
  • ·         Heat oil in a vessel, add mustard seeds, when splitters add hing, curry leaves, Red chilies
  • ·         Now add chopped onion and Green chili-garlic paste – sauté
  • ·         Add turmeric powder, chili powder, Salt and Sugar
  • ·         Add cooked Kaddhu to the vessel, mix and let it cook for few mins
  • ·         Now add Peanut powder in it and mix – let it boil for few mins
  • ·         Add chopped coriander leaves – serve with roti (or) Add Fresh Curd/Yogurt to it and serve with steamed Rice – tastes awesome
