Ingredients:
Brinjals
– Slit into 4
Mixture
of Salt, Turmeric powder, Red Chili powder, Saunf powder and Amchoor powder
Chopped
Onion
Chopped
Tomatoes
Ginger-garlic
paste
Dry
Coconut Powder
Tamarind
Jaggery
– 1 tbsp
Preparation:
Add
the Mixture of Salt, Turmeric powder, Red Chili powder, Saunf powder and
Amchoor powder into the slits in brinjals and fry them in little oil in a
frying pan. If you have a lid cover and let them cook well. But keep turning
the brinjals from time to time. Keep them aside once done.

Heat oil in a frying pan, add mustard, cumin seeds and when
they crackle add chopped onions and coconut powder - saute

Add ginger-garlic paste – sauté well and once raw smell
vanishes add chopped tomatoes with turmeric powder, chili powder, coriander
powder, garam masala, pinch of saunf powder, amchoor powder and salt – mix well

Add the roasted brinjals to the cooking pan, mix well so that
its covered well with the masalas

Add tamarind water and jaggery, mix well and let it cook for
few mins

Turn off the burner, garnish with chopped coriander leaves,
coconut powder and serve hot with Chapati/Parantha/Rice
