Rajma and potato sabji

Ingredients:

Soaked rajma (overnight )
Potatoes – 2 chopped into big pieces
Onion – 1 big sized
Tomato – 1 medium sized
Ginger-garlic-green chili paste

Masalas: Turmeric powder, coriander powder, chili powder, garam masala and salt
Coriander leaves to garnish

Steps:

§  Heat cooker, add oil and once hot add mustard and cumin seeds
   When they splitter add chopped onions and Ginger-garlic-green chili paste – sauté well
§  Add the tomatoes and the masalas – mix well
§  Add the soaked rajma and chopped potatoes – sauté well for few minutes till the masalas gets coated on the rajma and potato
§  Add water, cover the lid and let it cook for 2 to 3 whistles
§  Turn it off, let it cool and then open the cooker lid
§  Turn on the burner again, cook it in low flame without the lid for few minutes
§  At last add chopped coriander leaves, few drops of lemon juice and serve hot along with chapatti, roti or phulkas. Also tastes good with rice.
