Onion Palak Uttappa

Ingredients:

Idly / Dosa Batter + salt
Onions - finely chopped and fried in little oil
Palak - finely chopped and tossed in the same pan after onions
Green chillies (finely chopped) (or) Black pepper powder (or) idly podi
Oil / ghee

Steps:

_ Heat non stick tawa and add a ladle full of idly / dosa batter
_ Spread into medium sized round keep it thick
_ Dont spread wide coz uttappa has to be little thick and spongy (not thin and crispy like paper dosa)
_ Quickly garnish the fried onions and palak over the dosa
_ Also add chilies / black pepper powder / idly podi over it
_ Add oil or ghee around the uttappa
_ Cover the tawa with its lid so that the upper side of the uttappa cooks with its own steam and we dont have to turn it upside down
******Adding the ingredients should be very quick so that we can cover n cook the uttappa well (else the upper layer will not be cooked not all)
******Cook in medium flame so that the other side doesnt get burnt

Once taken out of the tawa you can even garnish with Butter / Ghee / grated Cheese or paneer and serve with any kind of chutney or even without chutney if you are using idly podi.........
