Ingredients:
- Matki usal (boiled)
- Brinjal 3
- Potato 1
- Tomato 1
- Soya chunks (meal maker)
- Onion 1
- Ginger garlic paste
- Turmeric powder, coriander powder, chili powder, Garam masala and salt
- Dried coconut scrapings
Steps:
- Matki usal (boiled)

Steps:
- Heat oil in a kadai and add mustard seeds, cumin seeds and when it splitters add onion, ginger garlic paste and all masalas
- After a while add chopped tomato, mix well
- Add chopped Brinjal and Potatoes
- Cover and let it cook for 5 mins
- Check and add water if necessary
- Cook for few more mins and then add soaked soya chunks and boiled matki usal
- Let it cook well for 5 to 10 mins
- Add coconut scraps and chopped coriander leaves
- Turn off the burner and mix well.
