Matki usal with Vegetables

Ingredients:
- Matki usal (boiled)
- Brinjal 3
- Potato 1
- Tomato 1
- Soya chunks (meal maker)
- Onion 1
- Ginger garlic paste
Turmeric powder, coriander powder, chili powder, Garam masala and salt
- Dried coconut scrapings

Steps:



  • Heat oil in a kadai and add mustard seeds, cumin seeds and when it splitters add onion, ginger garlic paste and all masalas
  • After a while add chopped tomato, mix well
  • Add chopped Brinjal and Potatoes
  • Cover and let it cook for 5 mins
  • Check and add water if necessary
  • Cook for few more mins and then add soaked soya chunks and boiled matki usal
  • Let it cook well for 5 to 10 mins
  • Add coconut scraps and chopped coriander leaves
  • Turn off the burner and mix well.
