Bindi Fry

Ingredients:

Bindi / Okra - 1/4 kg
Potatoes - 2
Onion - 1
Tomato - 1
Capsicum - 1/4
Green chilies - 2
Ginger garlic paste
Masala: Turmeric powder, chili powder, coriander powder, kala ghoda masala (home made) and salt.

Preparation:
- Wash the okra / bindi, chop off both the ends. Slice it using slicer blade in the food processor
- Wash and peel off the potatoes and grate it using food processer
- Chop the onion, capsicum and green chilies together using chopper blade in the processor.
- Cut the tomato into medium sized wedges.

Steps:
* Heat oil in a kadai, add mustard and cumin seeds
* When splitters add chopped onion, capsicum and green chili.
* Add ginger- garlic paste in it, mix well and cook till the raw smell of it recedes
* Now add all the masala ingredients and mix well
* Add the bindi, potato and mix well with the ingredients and let it fry well in the oil.
* Cover the lid and let it cook in low flame but make sure it doesnt get burnt
* Keep stirring it and add more oil or water if necessary (I added water and it came out well)
* Add tomatoes, mix it once and cover it again for few minutes.

Turn off the burner and garnish with coriander leaves.
