Mixed Vegetable Pulao


Ingredients:

Carrot – 1, cut into long and thin slices
Beans – few, cut into long pieces
Potato – 1, small, cubed (optional)
Dry spices – Bay leaves, cinnamon sticks, star anise, and cloves
Oil / ghee
Onion – 1, medium, chopped
Ginger – 1 inch piece
Garlic – 4 to 5 cloves
Green chili – optional
Basmati rice / any other rice – wash and soak for ½ hr
Water (usually double the quantity of rice)
Salt

Instructions:

  • ·         Heat ghee or oil in a pressure cooker
  • ·         Make a fine paste of onion, ginger, garlic and chilies
  • ·         Add dry spices and after a minute add the chopped vegetables – saute
  • ·         After few minutes add the onion-ginger-garlic paste and salt
  • ·         Add the soaked rice and stir for few minutes so that the ingredients gets nicely mixed up and rice gets the flavor
  • ·         Add water and cover the lid of the pressure cooker
  • ·         Wait for the number of whistles as per your cooker and turn off
  • ·         Serve hot with any kind of gravy like shorba or korma or curry
