Ridge gourd Sabji / Thurai Sabji / Peerkangai curry (Maharastrian style)


Ingredients:

Oil
Mustard seeds
Ginger-garlic paste
Tomatoes - 2, chopped
Ridge gourd / thurai / Peerkangai - 2, cubed
Salt, Turmeric powder, Chili powder, Coriander powder and Garam Masala / Sabji Masala
Groundnut powder - Coarsely grinded
Chopped coriander leaves

Instructions:

  • Heat oil in a Pressure cooker, add mustard seeds
  • When it splitters, add ginger garlic paste - saute for a minute or two
  • Add chopped tomatoes, turmeric powder, chili powder, coriander powder and salt - mix well till tomatoes are mashed
  • Then add the cubed vebetable, mix well, cover the pressure cooker with the lid and wait for 2 whistles
  • After 2 whistles, once the pressure it out, open the lid of the cooker, turn on the burner and add 3-4 tbsp of groundnut powder - let it boil and add garam masala, chopped coriander leaves
  • Serve with hot chapati / rice
