Ingredients:
Oil, Mustard and Cumin seeds
Chopped onion - 1
Crushed garlic cloves - 3 to 4
Chopped Tomato - 1
Cubed vegetable - kaddhu / bottle gourd / soraikkai
Salt, Turmeric powder, Chili powder, Coriander powder and Garam Masala / Sabji Masala
Groundnut powder - Coarsely grinded
Chopped coriander leaves
Instructions:
- Heat oil in a Pan, add mustard and cumin seeds
- When it splitters, add chopped onion and crushed garlic - saute for a minute or two
- Add chopped tomatoes, turmeric powder, chili powder, coriander powder and salt - mix well till tomatoes get mashed
- Then add the cubed vebetable, mix well, cover the pan with a plate and add a cup of water on the plate. This will avoid the vegetables from getting burnt inside by maintaining water content.
- Once the vegetable is cooked, add 3-4 tbsp of groundnut powder - let it boil and add chopped coriander leaves at the end.
- Squeeze a few drops of lemon juice in it and serve hot with chapati / rice
