Sevvaiya Kheer / Semiya Payasam

Ingredients:

Semiya / Semolina – 1 cup
Ghee
Dry fruits – Cashew nuts, Dry grapes, Almonds, Pistachio
Milk – ½ litre
Sugar – 5 tbsp
Crushed green Cardamom - 2

Instructions:

·         Heat pan and dry roast Semolina for few mins in low flame – keep stirring to avoid burning
·         Same time boil milk in a saucepan in medium flame
·         When it starts boiling add the roasted semolina and sugar – allow it to boil in low flame till its cooked and also the milk is reduced to required consistency
·         Now add crushed cardamom for the aroma and Ghee roasted dry fruits
·         Mix and cool it in refrigerator before serving


**** If you don’t like to ghee-roast the dry fruits just add it like that. But to bring the ghee flavor ghee-roast the semolina instead. However you like!
