Vegetable soup with Noodles

Ingredients:
Vegetables I used (1 Potato, 2 carrots, few Spinach leaves, soaked green peas)
1 Onion – finely chopped
4-6 Garlic cloves (thinly chopped)
½ small sized Capsicum
Spaghetti (took few spaghetti for noodles)
 1 tbsp Vinegar
1 tbsp Soya Sauce
1 tsp Green Chili Sauce
Pepper powder, Salt and pinch of Sugar
1 tsp Corn flour

Steps:
§  Chop all vegetables and ¾ of onion, stir fry for sometime in a tsp of oil
§  Add ½ cup of water to it and cook / boil it in microwave in High for 5mins
§  Make a coarse paste of it in the blender with very little water
§  Heat the wok, add 1 tsp oil, add remaining ¼ chopped onion, chopped garlic, capsicum – fry for few mins
§  Add the vegetable paste, salt, vegetable stock / water, sphagetti, Vinegar – bring it to boil
§  Add Soya sauce, Chili Sauce, Pepper powder, sugar – boil for few mins
§  Now mix Corn flour to little water and add it to the soup – let it thicken to your choice of consistency and turn off the burner

§  Serve hot or freeze it and use later
