Vegetable Korma with coconut

Ingredients:


Chopped Vegetables – Cabbage, Potato, Carrot, Green peas (can also add cauliflower, capsicum, beans etc)
Fresh Coconut with Saunf and a cinnamon stick – make fine paste
Tadka – Oil, mustard, cumin seeds, curry leaves, ginger-garlic paste, chilli powder – mix well
Salt, Turmeric powder, Sabzi masala, Coriander powder, Garam masala

Steps:

o   In a microwave safe bowl, take chopped vegetables, half cup of water, Turmeric powder, sabzi masala, salt and coriander powder – microwave with lid on High for 4 mins
o   Take it out, place a small microwave bowl with the tadka mix in it (covered with microwavable lid) - microwave High for 2 mins
o   Add that tadka to cooked vegetable bowl along with coconut paste, adjust salt, spice and mix well
o   Microwave High with lid for another 3-4 mins, let it stand for 2 more mins before opening it
o   Garnish and Serve with Chapati / Rice
