Lauki Greens

Ingredients:

Chopped Lauki
Chopped Small sized onion
Chopped green chilies
Coarsely grounded peanut powder
Chopped coriander leaves

Preparation:
  • -          Heat oil in a small sauce pan, add mustard  and cumin seeds
  • -          Add chopped onion, green chilies and sauté
  • -          Add chopped lauki  and sauté well till it’s almost cooked with salt to taste
  • -          When the lauki is nicely cooked, add coarsely grounded peanut powder and mix well
  • -          After few mins add chopped coriander leaves and turn off the burner
  • -          It tastes good with roti and also can be served as side dish with rice and sambar/gravy
  • -          If add with yogurt it’s also served as Raita
