Jamaican Rice / Rajma Fried Rice

Ingredients:

Soaked rajma
Rice
Coconut milk / grated coconut scraps
Spices - Bay leaves, Cinnamon, Cloves, Star seed, Cardamom, etc
Chopped Onion
Capsicum - cubbed
Garlic - chopped into tiny pieces
Chili powder and Pepper powder

Preparation:
  • In a cooker add washed rice, soaked rajma, enough quantity water and coconut milk / coconut scraps with little salt - pressure cook
  • Heat oil in a pan, add all the spices along with mustard and cumin seeds
  • Add chopped Onion, Garlic, Capsicum - saute well
  • Add Chili powder / Pepper powder and little salt since we already have salt in Rice also
  • Once its sauted well add the rajma rice to it and mix well like fried rice
  • Steaming hot Jamaican Rice is ready........... I am sure you will love it
