Eggs
– 2
Onion
– 1 (optional if using spring onion)
Tomato
– half, sliced into thin pieces
Spring
onions – 2 (both white and green, chopped)
Chopped
Mint leaves
Chopped
Coriander leaves
Carrot
– half, grated / chopped into tiny pieces
Cheese
– grated
Salt
and pepper powder
Oil
or butter for greasing
Steps:
- 1) Heat little oil in a small kadai, sauté the onions, spring onion whites and carrot for few minutes
- 2) Add a pinch of salt in it, add tomato slices also, sauté for a minute before turning off the burner. Keep it aside
- 3) Preheat OTG at 300 degrees both top and bottom for 15 mins
- 4) Take a baking bowl or mould (I used mould), grease it with butter or oil
- 5) Break an egg into the mould. Don’t even touch because we want the egg yoke to be in its shape
- 6) Temper it with salt and pepper powder, add half of all the above ingredients
- 7) Break the 2nd egg on it. Follow the step no 6 again with the remaining ingredients
- 8) Keep the baking mould in the OTG and let it bake at 170 degrees for 20 to 30 mins

ReplyDeleteYa Poorni.... that was the first time i prepared it. But today i made it again with cucumber, cabbage and tomato slices in it along with leftover spring onion sabji...believe me its a must try recipe and also healthy and stomach filling as well. We had it with pav.
