Sweet Potato Curry

For Masala:

Coconut - 100g (grated / cut into pieces)
Onion - 1 medium size
Red chillis - 2
Coriander seeds / powder
Groundnut
Cumin seeds - 1 tspn
Fennel seeds - pinchful

- Heat little oil and fry all the above ingredients and then once cooled make masala paste.
- Boil the chopped sweet potatoes, drain and keep aside
- Heat oil, add mustard, curry leaves, green chillis, hing, chopped tomatoes (1 medium sized), chopped garlic (2-3) and turmeric powder.
- Once its cooked well add the masala paste and let it cook well
- Now add the boiled sweet potatoes, water, Sambar masala, garam masala and salt
- Mix well and bring it to boil

Garnish and serve hot with roti, chapati or rice.
