Red Pumpkin Sabji / gravy

Ingredients:

Red Pumpkin - cubed
Grated dry coconut
Tamarind
Pinch of Sugar

For masala:
Chopped onion
Green chilis
Ginger garlic paste
Kas-kas
Fried Groundnuts

Steps:

  1. Make a paste of all the masala ingredients and keep it aside.
  2. Heat oil, add mustard seeds and red chilis.
  3. Add the masala paste to the oil and saute well.
  4. Add turmeric powder, chili powder, coriander powder, salt and kala ghoda masala.
  5. Also add grated dry coconut, mix well and add the cubed pumpkin.
  6. Add water and let it cook.
  7. Once half done, add tamarind water to it and mix well.
  8. Add a pinch of sugar and let the pumpkin cook well
  9. Once done turn off the burner and garnish with chopped coriander leaves.
