Peerkangai Curry (Ridge gourd) for Chapathi

Ridge Gourd is called Peerkangai in Tamil and Tori / Thurai in Hindi. 

Ingredients:

Ridge Gourd - 1
Onion - 1
Tomato - 1
Capsicum - 1
Ginger-garlic paste
Masala :  Turmeric powder, Chili powder, Coriander powder, Garam masala, Salt.

Steps:
1. Wash and peel off the ridges and skin in the ridge gourd. chop into small pieces. (Keep the peel aside coz that can be used to make chutney which is very tasty).
2. Chop the onion, tomato and capsicum as well
3. Heat oil in kadai, add mustard and cumin seeds and when they splitters add the chopped onion, capsicum and ginger-garlic paste.
4. Mix well and add all masalas.
5. Also add the tomatoes along with chopped ridge gourd, mix well and let it cook by covering with the lid.
6. After a while add needed quantity water and cook till its done.

Add chopped coriander and serve hot with chapatis / parantha.
