Mushroom Gravy (South Indian Style)

Ingredients:

* Button Mushrooms
* Soya chunks
* Onions - 2 (big in size)
* Tomato - 1
* Spices ( Bay leaves, Cloves, Cinnamon, Black pepper,etc)
* Ginger - garlic paste
* Curry leaves (optional)
* Fresh Coconut - 1/2
* Turmeric powder, Curry powder (home made) and Salt.

Preparations:

1. Wash the button mushrooms and cut into 2 or 3 pieces each
2. Chop onions and tomato - fry onions and curry leaves in a little oil till it turn slightly brown. Add them to a mixie jar and add chopped tomato into the same pan and toss for a while. Add that as well to the mixie jar and grind into paste.
3. Soak the soya chunks in warm water and squeeze out all the water just before adding it in the gravy.
4. Cut the half of fresh coconut white into small pieces and make a paste of it in a mixie jar.

Steps:

- Heat a kadai, add oil in it and once its hot add all the spices along with mustard and cumin seeds in it
- When the seeds splitter add the onion-tomato paste, ginger garlic paste and mix well by adding turmeric powder, curry powder and salt as well.
- Let it cook for few mins till the raw smell of ginger and garlic recedes and then add the mushroom and soya chunks. Let them cook for 10 mins by adding water.
- Add the coconut paste, mix well and let it boil for 5-10 mins in medium flame.
- Turn off the burner and garnish with chopped coriander leaves.
