Veg Manchow Soup:



Ingredients:

Onion - 1 (chopped thin and long)
Spring onions - 2 to 3 (chopped)
Garlic cloves - 4 to 5 finely chopped
Ginger-garlic paste
Green chillies - 4 to 5 finely chopped
Cabbage - 100 g chopped into long pieces
Carrot - 50 g grated or very thinly sliced
Spinach / Palak - 2 to 3 leaves (finely chopped)
Capsicum - 1 quater of a small size capsicum chopped into long pieces
Mushroom - 2 button mushrooms (chopped)
Tofu pieces (optional)
Corn flour - 2 tbsp (mixed with water without lumps)
Soya Sauce
Red Chilli Sauce
Black pepper powder
Salt and a pinch of sugar
Fried hakka noodles

Steps:

* Heat oil, add onion, spring onion, green chillies, garlic, ginger-ginger paste and mix well
* Add chopped carrot, cabbage, half of the capsicum and mushrooms
* Once cooked add veg stock / water, red chilli sauce, soy sauce and also chopped tofu.
* Mix cornflour with 1/4 cup water and add into the soup
* Add salt and sugar and mix till it thickens
* Add rest of the chopped capsicum and fried noodles just before serving.

Note: Can also add minced chicken breast and egg to prepare Chicken Manchow soup.
