
First of all chop the veggies you have like onions, tomatoes, cabbage, capsicum, spring onions, coriander leaves, lettuce(long and thin slices). Grate veggies like carrots, beetroot, radish, etc.,
Choose all your favorites. Keep in the fridge for chill and crunchy taste.
Use a sandwich spread. You can either prepare it at home or buy a sandwich spread from the supermarket. Any thick gravy from the day's meal would also do the work.
Mint chutney, beetroot chutney or even shrikhand can be used as a spread. I prepared mint chutney and also used the sandwich spread that i brought from the supermarket.
Now take two slices of bread, add and spread the base eventually on both slices, add the chopped or grated veggies on one slice, add grated cheese on the other and now keep one above the other and press gently so that they stick along. Cut the bread diagonally into two pieces.
Can also add tomato sauce, jam, pickles, etc., depending upon your desire and taste.
If you don't like raw bread, can also grill it in a sandwich maker.
This is a very simple and very healthy breakfast, nowadays becoming very famous among youngsters in India.
Why go out and order a sandwich? Store the ingredients in the fridge and daily breakfast becomes easy and quick.... and most importantly healthy, low calorie breakfast for weight watchers!
