Sweet potato with coconut sabji / poriyal


Ingredients:

Sweet potato – cut into wedges
Urad dal / ulundu paruppu

For masala:

Fresh Coconut
½ Onion chopped
2 cloves garlic
Dry red chilies
Curry leaves

Steps:
  • ·         In a hot kadai add little oil and toss the chopped onion, curry leaves and dry chilies
  • ·         Grind all the masala ingredients together  - keep it aside
  • ·         Boil the sweet potato wedges with little salt for few 5 mins
  • ·         Drain the water and keep it aside
  • ·         Now heat oil in kadai / pan again, add 2 tsp urad dal to it
  • ·         When they are slightly brown add the masala paste in it – sauté for few mins with turmeric powder and salt ( red chili powder / pepper powder – optional )
  • ·         Now add the wedges – sauté well for a while and then cook covered for few mins with a little water to it. This can be served with both Roti and Rice.
*** I dint add turmeric powder but you can if you wish.
