Tomato Stew / Thakkali Kulambu

Ingredients:

Tomatoes - 4 to 5 (mashed or pureed)
Onion - 2 (big)
Fresh Coconut (scraps or ground coconut paste)
Ginger
Garlic
Green chilies
Curry leaves
Spices - 3 cloves and 1 inch cinnamon
Bay leaf
Mustard and Cumin seeds
Sambar masala / coriander powder and chili powder
Salt
Turmeric powder
Hing

Steps:
  • Add 1 chopped onion, ginger, garlic and green chilies to a mixer jar to make paste
  • Heat oil, add Bay leaf, Spices - 3 cloves and 1 inch cinnamon, Mustard and Cumin seeds, hing, another of chopped onion, curry leaves - saute for few mins 
  • Add the paste, saute for few mins again and add Turmeric powder, Sambar masala / coriander powder and chili powder & Salt
  • Mix and saute well till the raw smell vanishes and then add mashed tomatoes
  • Cover the kadai with water on the lid to avoid the contents from burning
  • Keep it in medium flame and in the meanwhile grind fresh coconut into a paste
  • Once tomatoes are boiled / cooked, add the coconut paste, mix well and bring it to boil once before turning off the burner.
The Tomato Stew is ready to be served with hot idly, dosa or steamed rice.
