Carrot Sabji

This is one of my favourite side dishes for chapati / roti. My mom use to prepare it this way with sambar masala in it.. yummy...

Ingredients:
- Grated carrots
- Tomato - 1
- Small Onions - 2
- Turmeric powder, Sambar masala and salt

Steps:
- Heat oil in a kadai add mustard and cumin seeds
- when it splitters add chopped onion and tomatoes
- Add Turmeric powder, Sambar masala and salt
- Mix well and then add the grated carrots to it
- Toss well,cover with a plate and let it cook adding little water on the plate which will prevent the carrot from burning.
- Later if necessary add the hot water to the carrot sabji, mix well and cook for few more minutes.
- Add chopped coriander leaves and mix well before serving.
