Moong dal Kachori and Dahi Chaat


Ingredients:


  • Soaked Split Moong dal / Yellow Moong dal - 1/2 cup (soak for 2 hours)
  • Maida / All purpose flour - 2 cups
  • Melted ghee /Clarified butter - 4 tbsp
  •  Oil - 2 tbsp
  • Hing / Asafoetida powder
  • Jeera / Cumin seeds - 1 tbsp
  • Daniya / Coriander seeds - coarsely ground - 1 tbsp
  • Saunf / Fennel seeds - 1 tbsp
  • Grated / finely chopped ginger - 1 tbsp
  • Finely chopped green chilies - 1 tbsp
  • Chili powder - 1 tbsp
  • Garam masala - 1 tbsp
  • Salt to taste
  • Besan / Chick pea flour / kadala maavu - 5 tbsp
  • Amchur / Dry Mango powder - 1 tbsp (or) squeeze half a lemon



Instructions:

  • Strain the water out of soaked moong dal completely and coarse grind for just few seconds in the mixer
  • Mix the ghee with maida and make soft dough by adding water little by little - rest it for 15 minutes by covering it with a cloth
  • For the filling - Heat oil in a pan and add hing, jeera, daniya, saunf - saute for a minute
  • Add grated ginger, green chilies, mix well and add both the mentioned masalas and salt
  • Saute for few minutes and add besan - mix and dry roast for about 5 minutes
  • When the besan is roasted a nice aroma will arise indicating the filling is ready
  • Add the amchur powder / lemon juice, mix well and turn off the burner after few minutes - let it cool completely
  • Now make small lemon sized balls of the dough
  • Roll out small circles as the size of the pooris, add 2 spoons of the filling to the middle and close the edges from all sides without any weakends or openings
  • pinch off any extra dough on the top and flatten it gently with the fingers or roll into kachori size
  • Heat oil in a kadai and deep fry the kachoris in medium flame on both sides till its fluffy, flaky and crispy
  • Medium flame is good to make kachoris that are cooked well on the inside as well with good crust on the outside
Dahi Chaat:
  • On a plate, place the kachori, break in the upper crust/ layer and add the following ingredients. Since chaat may include many ingredients and options you may skip or add few if not available
  • Chaat ingredients - Yogurt, Green chutney/Mint chutney, Imli ki chutney or Tomato ketchup, Chaat masala, Chopped onions, Coriander leaves, Sev, boiled and mashed potato, bhondi etc
  • I have only used the yogurt and the chutneys to keep it simple
  • Enjoy the chatpata dahi kachori for a stomach filling evening/party snack
