Ingredients:
Grilled
Chicken – chopped into lengthy pieces
Vegetables
– Potato, cauliflower, cucumber, carrot, onion, tomato (I have only these
vegetables)
Cheddar
Cheese – grated (I only had that cheese)
Salt, Red chili flakes
Oil
/ butter to stir fry
Instructions:
In
boiling water add chopped potato, cauliflower and carrot. Blanch them until
little more than half cooked. Drain the water completely and keep it aside when
cool.
Heat
oil in a pan, when its hot add potatoes and onion – sauté well. Add salt and
red chili flakes – sauté till its fried well
Transfer
the onion-potato stir to a salad bowl. Now in same pan add oil and stir fry the
cauliflower and carrot pieces with salt and chili flakes.
Once
done transfer them also to the salad bowl, add chopped tomatoes, cucumber
pieces, grated cheese, salt, pepper powder.
Now
add the grilled chicken pieces to the salad bowl, mix well and then garnish
with slices of cucumber on the sides of the bowl while serving.
(I
had Honey Mustard Salad dressing which I added while eating the salad with pav
/ roti. You may also use Mayonnaise)
**Also
squeeze in half a lemon juice if you don’t want to add any dressing.
